This evening I overheard some ladies on the train talking about all the March birthday parties they need to attend for friends and friends' kids (apparently something very suspicious is happening in the month of June!).

For her cake, Martha uses an ingredient long-beloved of American bakers, especially those in Southern states - buttermilk. Its sourness increases the likelihood of an extra-fluffy batter, as the acidity in buttermilk helps turns leavening agents like baking soda and baking powder up to 11. And as an added bonus, buttermilk's tang provides a divine counter-note to the rich sweetness of chocolate.
